HOMEMADE GRANOLA

Surprise! You're a morning person now.

When I smile at you in the morning. It’s fake. That’s because, I don’t want to be here right now - I want to be back in bed. My snooze button is my abusive relationship. I know it’s bad. It’s only going to result in me having a panic attack from trying to fit an entire morning routine of an hour and a half, into 20 minutes. I just keep going back.


In an effort to love myself more, I made this homemade granola. For at least two weeks of my life, I did rise and shine. Not only is this wholesome and delicious, but you also know exactly what you put into your granola -unlike store bought stuff, with labels that hides under the pretense of ‘health and wellness’, while in reality feeding you spoonfuls of sugar (or whatever else they put in there) for breakfast.


I put a pretty jar of this next to my desk. Breakfast was easy, and all of a sudden my morning smiles were real!



 

Recipe


Ingredients


4 Cups old-fashioned rolled oats

1 1/2 cup raw nuts/seeds - I used sunflower and pumpkin seeds (they’re not too pricey) and a packet of mixed nuts.

1 1/2 tsp of salt (or just salt to taste)

1 tsp ground cinnamon

1/2 cup olive oil/melted coconut oil

1/2 cup honey (I popped it in the microwave for 20 seconds to make it go runny)

1 tsp of vanilla extract


Other optional additional mix-ins:

You can really make this recipe your own by adding your favorite dried fruit, or some chocolate chips. It’s up to you, so make a combo that you know will get you out of bed in the morning.

Instructions


  1. Preheat your oven at 190°C, and line a large baking sheet with parchment paper

  2. In a large bowl mix the oats, nuts and seeds, salt and cinnamon together.

  3. Pour in oil, honey and vanilla and mix it all together until every oat and nut is lightly coated.

  4. Spoon the mixture into your prepared pan and spread it in an even layer.

  5. Bake for 21-24 minutes, or until golden brown, stirring halfway.

  6. Let granola cool completely. It will further crisp as it cools.

  7. Stir in dried fruit or chocolate chips if your using, and break up big clumps with your hands.

  8. You can store your granola in an airtight container for 1-2weeks, or freeze it in a sealed bag for up to 3 months.
